Jeff is originally from St. Louis, Missouri.

He studied culinary arts at Johnson and Wales University.

Off-bottom aquaculture

Jax Fish House & Oyster bar is proud to use locally grown, sustainably farmed oysters from Rappahannock River Oysters.

This Virginia oyster farm, which produces oysters exclusively for the restaurant, was established in 1899 on the Chesapeake Bay.

It was revived in 2002 by cousins Travis and Ryan Croxton, who have turned the oyster industry on its head and embraced sustainable practices.

Chef Sheila Lucero is the Executive Chef at Jax Fish House & OySTER Bar.

She joined the opening crew of the Denver location and rose through the ranks to become the restaurant’s Chef de Cuisine.

Under her leadership, Jax Fish House and Oyster Bar earned widespread acclaim.

Lucero has taught culinary programs in Boulder, Fort Collins, Glendale, and Fort Collins.

Sustainable seafood

For example, Emersum oysters are harvested by the Rappahannock River Oyster Company (RRO), which began in the Chesapeake Bay in 1899.

The company also helps improve the ecosystem by seeding dozens of wild oysters in the area.

The restaurant was recently recognized as one of the country’s first restaurants certified by Monterey Bay Seafood Watch.

In addition, Jax is the first restaurant in the state to be recognized as a Seafood Watch partner.
